You might want to have a look at the synthesized variable capacitor I use for the Unocompressor.

That circuit could be used to synthesize a variable 4.7 to 20 uF cap controlled by a pot.

As shown the range is 2.2 to 22 uF.

I haven't but I did have a client add a small-value one, not variable, at the rectification node.

The variable capacitor that I think you may be referring to may be one similar to the one I used in the UnoCompressor.

Yes, that's the one.

Unlike the Uno, the Waveulator does not link for stereo after the rectifier, so it would need two circuits for L and R.

Also, with the Uno, the "Variable RMS" circuit and pot is wrapped around a follower. But it's not the same to just pick the signal from the output of IC9A and IC10A of the Waveulator, right?

So would need to lift pins 3 and insert dual op amp there on the Waveulator?

On the other hand, inserting a variable Att/Rel circuit into the Waveulator... I think that would defeat the purpose and strength of the Waveulator -- zero latency to shave off transients, like brickwall peak limiter.

That's why I never tried it.

Adding a variable cap at that node, if the range isn't really large, will make it a zero attack variable release limiter. With larger value caps some attack time would be added due to the finite current available to charge the cap.

When I have one on the bench soon I'll try it and see how it sounds.
